Misc Jan

I have been terrible about keeping my blog up lately!  It takes a snow day to get a few posts in!  Here are some misc. shots from January! We had a great start to the despite a few family illnesses (seems like both kids have been sick about 4 times each). I also went to a work conference which was a lot of fun. Andrew switched to a new school which is really nice.

New Years Eve/Anniversary 2014

It is always a little challenging having a wedding anniversary on New Years Eve, but this year we had a BLAST!  Matt, Vicki, Paul and I went out to a nice dinner at Flyte and then had some grown up time at Matt and Vicki's while Bridgette threw a party for all the kids at our house!  Everyone had a great time and 2015 got off to a great start!

Thanksgiving Mountain Style

We spent a really fun thanksgiving this year at the mountain house.  It was so much fun to play with our cousins Matthew, Zachary and Colin.  The kids enjoyed indoor putt-putt and of course football with Uncle Paul (while Liz and I did some shopping!)  On Thanksgiving night, the extended Townsend clan was there (minus the Keith Townsend family - we missed you!). The cousins had a BLAST.  Carrie found a new BFF in her second cousin Phoebe. We also got some great photos with all generations and Great-Grand Moms.  Enjoy!

Batboy Turns 4

I can't believe my baby turned 4 this year but it is true, it happened!  We celebrated in style with a batman party. This was Andrew's first 'real' birthday party and it came equipped with a real batman (aka Adam, Bridgette's husband).  We called Batman when a villain stole the birthday cake and Batman came bounding down the hill to the rescue!  The party was a huge success - lots of fun games. Gigi made an amazing life-size beanbag and 'pin the bat' on batman game (see pictures below) - it was so big we couldn't fit it in the car!  We also had fun on bubble wrap!  Happy birthday Andrew!

Baked Ranch Chicken

This is a very easy recipe.   Very light too!

Ingredients:
  • 2 skinless, boneless chicken breasts
  • 1 cup cornflakes
  • 1 packet of dry Ranch dressing mix
  • 1/2 cup sour cream

Directions
  • Preheat oven to 350.
  • Spray baking dish with Pam.
  • Rinse chicken breasts and pat dry. 
  • Coat each breast with sour cream.
  • In Ziploc bag, add cornflakes and ranch mix. Crush cornflakes well.
  • Put each breast in bag one at a time and shake until well coated.
  • Place in pan and bake for 1 hour.

The Fair and our Veritable Smorgasbord

We have been watching a whole lot of Charlotte's Web recently, so when the fair was coming to town, we had to go!  We let Daddy have the morning off (so that he could play 5 hours of straight tennis in 90 degree heat) and Gigi and G-Pops joined me at the Williamson County Fair.  Rides, animals, the Ferris wheel and of course, Cotton Candy.  The whole time I was thinking of this song....

A fair is a veritable smorgasbord orgasbord orgasbord
After the crowds have ceased
Each night when the lights go out
It can be found on the ground all around
Oh, what a ratly feast!

Melon rinds and bits of hotdogs
Cookie crumbs and rotton cotton candy
Melted ice cream, mustard dripplings
Moldy goodies everywhere

Lots of popcorn, apple cores
Banana peels and soggy sadwiches
And gobs of gorgeous gook to gobble at the fair

A fair is a veritable smorgasbord orgasbord orgasbord
After the gates are shut
Each night when the lights go out
It can be found on the ground all around
That's where a rat can glut, glut, glut, glut!
