Mexican Grilled Corn

Me again!  I am in a blog mood today, I guess.....here is another favorite recipe!

Mexican Grilled Corn (From Everyday Food)


Ingredients:
1/3 cup grated parmesan
4 halved ears of corn, husks removed
1 tbs. butter, softened • 2 tbs. light mayo
¼ tsp chili powder
1 lime, cut in wedges
Coarse salt & pepper
Directions:
Heat grill to high. Place cheese on a plate and set aside.  Brush corn with butter and season with salt and pepper. Grill, turning every 2 to 3 minutes until tender and slightly charred, 10 to 12 minutes. Let cool 2-3 minutes.  Brush corn with mayo and roll in cheese to coat. Sprinkle with chili powder and serve with lime wedges.
